seems I have over upgraded my laptop, I got it in late 2012 it was screaming fast the.
Now I have upgraded to the Catalina and its a dog slow. Is there a way I can back of the items needed on
the laptop and start again from scratch, then just doing later OS upgrades to an acceptable OS?

If it is files that you want to backup, a USB drive will work great. Yea Catalina is trash, mojave or high sierra works best. You can downgrade to mojave, forgot how though.
 
Try downloading mojave from the mac app store and see what happens? I did this when I was upgrading my 2010" with an SSD. I installled a different OS from the mac app store and formatted it to the SSD.
