I’m looking for some buying advice....

I’ve convinced myself that I want a shiny new toy. I’ve pretty much talked myself into getting a new MacMini ($1099 6 CORE 3.0gHZ I5 model) and two LG 27UL600-W 27" OR two Samsung UE590 28" monitors. The object is to get 4k computing. I do not do video editing and photo work though I would like to be able to.

I currently have:
2012 Mac Mini i7 upgraded with 1tb ssd and 16GB ram connected to a Thunderbolt Display and an Asus PB278 and a 2016 MacBook Pro with 4 Thunderbolt ports.

I have considered the Mac Mini and an iMac 27". I would prefer a dual monitor setup and with my budget being about $2100, I ruled out the iMac. the 21.5" inch iMac is too small to me.
I then thought about the monitors and just using my MBP. I already have cables to hook it up to the monitors so they are not included in the budget.

What do you think I should do?
I'm looking for the pros and cons of either of these options....
Thanks in advance!

Conversely, I will have a Thunderbolt Display for sale in the Northern VA area if anyone is interested!?
