Hello,

I got Macbook Pro 2018 with 8 Gigs of Ram and 256 Gb of ssd, currently running Big Sur. How can I update to Ventura at the moment as I am afraid Sonoma might be too much for machine? Can I just so it like clean install with bootable usb drive with Ventura on it for example!
 
Sonoma runs about as well as Ventura, so it should be fine. But if you want to go with Ventura you can still find it on the Mac App Store: ‎macOS Ventura on the Mac App Store

You can either do a direct update or create a USB installer that would let you wipe the drive first. If your computer is running well I'd probably just run the update. You can always wipe it after that if you are not happy with how it performs.
