I use Apple Mail for email however recently it has started moving more of my genuine email into my spam folder. There used to be an option to trust mail from that person so it always went to my inbox however all I can see now is add the sender to my address book which I don't want to do.

How can I teach Mail that some emails are not spam?
 
Click the "Not Junk" button on the top. Also, if it is spam in your inbox, hit the "junk" button.
 
It's only there if you have a junk mail highlighted. If you don't even have a junk button on good email, right click and customize toolbar
