There seems to be a big bug in Mail.app where it sends messages composed in rich text as plain text messages. For example, my font and signature are set to Verdana font, size 12, but they get sent as plain text all the time.

Is there some sort of way to force Mail.app to send everything rich-text only / HTML text?
 
I have had all sorts of problems with mail.app including the encoding. My biigest issue was mail never sent mail from the correct server or was even able to connect. was a real disaster. Im using entourage 2008. much better
 
You could try setting the Mail > Preferences > Composing > to Rich Text and deselect 'Use the same message format as the original message'.

personally I hate HTML mail ~ plain text only here :)
