For some reason my Mac Mail client is doing something odd when I try to add PDF file attachments. Instead of attaching the file in the normal way, the image is actually displayed in the e-mail. It just started doing that.

Any suggestions?
 
It's still adding the attachment. You just see it displayed on your end. Depending on the settings of your recipients' mail client, it will either show as an attachment, or in the body, or both. The same is true for images.
 
If you just want it to display as an icon, right-click it and click “Display as Icon” or something. Same for images.
 
It's normal Mac Mail behaviour for single page PDFs and images.

As long as when you attach it you have the "Send Windows friendly" option turned on, the PDF / images is sent as an attachment. What the person on the other end sees will depend on what email application they are using, but they are proper attachments that can be saved.
