With a Mail.app setup with multiple POP accounts, is there a way I can set up "Automatically Bcc to myself" just for one of those accounts? The default setting appears to be a global setting and not per account, but I'm hoping there's a workaround.
 
Off the top of my head I'm thinking you could use the global setting and set up rules for the other two accounts to delete the BCC message when it comes in.
 
Yes, that would probably work except for those instances when you'd manually add a Bcc to a message because you specifically want to have a copy of just that specific message.

According to this posting there are hidden settings in Mail so I was hoping something like that could help set up auto-Bcc for just one account.
