Hi,

Why does Mail delete my email off the server when I do not have "Remove copy from server after retrieving" selected?

I am using a gmail account.

You may have to go into your gmail account settings. It may be surrendering your inbox to mail. I don't know for sure, but you could give it a try.

Yep, it is a setting in Gmail. You need to go to settings and then tell Gmail to keep a copy on the server.

To the OP. The default for POP is to delete mail after it is downloaded to the client. What you should do is enable IMAP and use it and if you set it to keep a copy on the server, when you delete it in the Mail application, it will just archive it. So you will not see it anymore in the inbox when using a browser. Also, if you archive it using a browser, when Mail syncs, it will remove it from the inbox on the mail app as well You also get all of your labels as folders in the Mail application as well.
