Is there anyway to install/download Mail 5.0 on Snow Leopard? Also, can anyone recommend a good email client? I've only ever used the regular OSX Mail client and was thinking of trying something new (better?).

No, there is no way to install Mail 5.0 on SL. If you want the new Mail, you're going to have to install Lion.

Postbox and Sparrow are both popular. If you want the 3-pane look of Lion's Mail app (and bunch of other functionality), those are good choices.
