iPod touch Mail problem

When i go into settings and then mail there is no option for it to aqutomaticly check my email every 15 minutes? how do i mkae it do that

Create New Mail Folder?

Anyone know how or if it's possible to create a new mail folder?
I've been looking and can't seem to come up with an answer.
I see in the documentation there are images that show additional folders but there's seemingly no way to add them.

Create a new mailbox in Mail and then sync through iTunes?

And they moved the 'check for new mail' for the mobile me thing.. caught be off guard.

Yeah, I tried that to no avail.
I'm running 2.0 and it seems like this should not be so difficult.
Then again, it certainly wouldn't be my first encounter with user error.
