Mail - Shutting it down... how ??????

I replaced my hard drive on my imac not to long ago and somehow today I did something and it started loading all my .me email from my account onto or into mail !!!

I dont download ANY mail ever ! I had my setting set where it was off before. I would really like to be able to remove Mail completly...

Anyone wana shed some light on how to either shut it down or delete it ?
