I'm using the Mail email client.

Is there really no easy way to produce strike-through text or even bullet-points?

I've searched the forum and can find nothing on strike-through. I did find one suggestion for bullet-points, which was to create the bullets in another text editor, then copy and paste in. Seems a little inefficient though! Especially for Apple.

I just found strike-through under 'Fonts'. Sorry! My question still stands for bullet-points though

Whereas your problem appears to have been solved, I thought I'd mention option-8 as a way to make bullets in case anyone wants one. :)

Is it possible to change the actual form of the bullet point from a list of 'dots' to a list of 'ticks'?
 
For strikethrough text, select Format-->Show Fonts (or Command-T). In the Fonts window that appears, the second drop down box along the top is your strikethrough options. You can select single or double strikethroughs.

Wow is that hidden, I never realized Mail could do strikethrough.

Yes, it's here, three levels down inside the fonts popup. But a really convoluted way of getting to something that I would otherwise use 10x more than italics. I would so love to have a keyboard shortcut or button on the menubar for this!
