For a legal case, I want copies of all sent and received copies of email messages regarding a certain topic in my incoming and sent messages folder. Is there any other way to do this than to open each email, copy and paste it into a document? I would like to get the headers, not just the message content. What's the easiest way?

if you are using hotmail you can use sweep function and it automatically finds all messages from "x" no matter what folder there in. (if you select that option)

Sounds like a wonderful feature in Hotmail, but I am using the Mail app on a Mac running Lion. Thanks anyway.

Have you tried the Rules option to set a rule to automatically do that?
Mail > Preferences > Rules tab > Add Rule

Create a rule for Subject or Message Content that meets your criteria to Copy the message to a set folder you set up for the copies.

I believe after the rules are set up you can go back in and select old messages and apply the rules to those
Mail > Messages > Apply Rules
