I'm a complete novice at working with Numbers (and spread sheets in general), and I'm having a pain of a time trying to figure out how to make all of the text in a cell wrap throughout the entire document.

I know that I can highlight a given cell and make it wrap on an individual basis, but I'm trying to figure out a setting that makes text wrapping a default behavior. I'm not having any luck.

Does anyone have any light to shed on that problem?

I am not at my MBP at the moment so I can't go into Numbers to check this, but in Excel for Mac (like Excel), if you click on format, then choose cell, you can select wrap text. See if Numbers has anything like that. If you go to help on the top, see if you can set this as a default for your document. I have numbers, but I do not use it often. Hope this helps.
 
Thanks, but I don't see any kind of option like that. I'll keep hunting around and share whatever I might find.

to wrap text, you need to go to Inspector > Cell format (the icon with the number 42) > and then choose Ajust text to cell

Wrapping text in a cell

I found where the wrap checkbox is located in Numbers, however, how to I control where the wrap occurs? ei, if I'm listing out a few items which I want on separate lines, but within the same cell, how is this done? In excel you hold down the "option & command" key & hit "enter/return".

If all you're needing to do is put a line break in a cell, use Option + Return.
