Make Apple Mail send default as Unicode (UTF-8)

Are there any way to make Apple Mail in Lion send messages default as Unicode (UTF-8) ?

Select Message/Text Encoding>Unicode (UTF-8).

Yeah, but it doesn´t make it the default choice for every new message...

Is this possible in any way ?

I have tried to input this command in Terminal: defaults write com.apple.mail NSPreferredMailCharset "UTF-8", but it doesn´t save up as default.
