I would like to know if I can make a full backup of iPhone 7 in iTunes and restore it completely on an ipod touch. In this manner it I can verify that all my contacts and passwords (I use a password manager app) have been backed up properly and I have an additional copies of the same on my ipod in case I lose or misplace my iPhone.
 
Hello there. Yes, you can create a full backup of iPhone and restore it on iPad but note that versions of OS on both of the devices should be the same or near each other. You cannot restore newer version of backup on older version of OS.
If everything is fine with that everything will be restored, for sure. Talking aboud password manager - if it's not a free password manager then you sould have an account for it. If yes - all you password that are stored on app's server will be downloaded on other device as well.
