Okay this is basically the situation.

I have a domain and hosting; the person in charge wanted to route that email through Gmail (using Google's domain tools, I think) for better spam protection and easier setup. I just got an iPod touch, and set up the email under Gmail, and in no time all the messages showed up in my box.

To test if the messages were stored locally or if it was viewed online and relied on the internet connection, I turned off the Wifi. The messages were still viewable, and I deduced that the messages had been downloaded to my iPod.

How can I make it so that I can only VIEW and SEND when I'm connected to the internet, and not make it store the info locally on my iPod?
 
Then you are set up for IMAP.

Are you sure you can view all of the emails, since IMAP does download all of the headers - you'll be able to see who it's from and the subject, but maybe not the actual message.
