Is there a way to make the watch alarm more difficult to stop? The snooze and stop on-screen buttons are too close together and when half asleep, it’s too easy to accidentally hit the stop button without even realizing it.

Perhaps having to scroll down to see it?

For now, I have to set multiple alarms in case I accidentally stop one without realizing it.
 
You can tap the top (left) or bottom (right) portions of the the screen for snooze vs stop, instead of the physical buttons.
I find this easier.

Half asleep me needs protections from accidental inaccurate taps. This is too hard. It’s like I have a single stub as a hand at that hour. No dexterity.

Yes, something like tapping any part of the screen to snooze, press the crown to stop.

I suppose the software designers at Apple are all quick risers and have no idea how people act when half asleep.

I tried doing it this way this morning, but it didn't work. I had to tap on the actual buttons. Is there some sort of accessibility setting I need to enable, or perhaps a difference in watchOS versions? I'm using a Series 7 running watchOS 9.1.

You can press the Digital Crown to snooze, or the side button to turn the alarm off. Apple's documentation only mentions this when using nightstand mode, but it also works when you're wearing it.

No, that's a lie. While wearing the Apple Watch, If you press the crown or the side button, it will stop the alarm.

Well, I know that isn’t the case for me… Pressing the crown snoozes my alarm, and pressing the side button stops it. I’ve been doing it this way for several weeks now. Maybe it’s new in WatchOS 9?

I just tested it. You are correct: pressing the crown snoozes the alarm, even while wearing the watch. (S8 on OS 9.1.)

My bad. I am on WatchOS 8. Maybe you're right, and they fixed it.
 
I know this kind of defeats the purpose but I set one on my watch and one about 5 mins later on my iPhone.
 
I couldn't find anything but maybe someone knows of an app that'll force you to solve a math problem to turn off the alarm.

There's an Android phone app that does that and it definitely wakes you up lol.
