Making Alias folders

Why is it that i can do this with some folder but not others as the folder i want to make an alias hasnt got that option when i right click?

If the item for which you are trying to create an alias, is in a folder that you don't have write access to, you don't get that option. Try command-option dragging the item onto Desktop or wherever you are planning to put that alias. It is very user-unfriendly that OSX does not give you any hint as to why it does not work or suggest a way around it.
