See my signature for my computer... I am trying to make a AES-256 encrypted image for sensitive documents, and with two tries now I have given up after about 20 minutes, with barely any noticable progress on the meter... my question is, how long should it take to create one of these? i have the strange feeling that i'm doing something wrong, but this is how I am telling it to create the image...

No no, you're doing it right. You have a 750gb HD. It's gonna take a while..

yeah, but the idea is to create an empty encrypted image, not encrypt the whole drive... I thought that these dynamically changed size based on what you put in them. why would my HDD size be a factor?
 
In Disk Utility, select from menu File>New>Blank Disk Image, from there you can tell it how large the image should be, the encryption to use and where to store it. It will take about 5 secs to create a 500MB "empty" disk image.
