I just upgraded my 5,1 mbp with a 500gb ssd that is currently my boot drive and has Mojave installed. I also have a 2TB time machine drive installed, a 1TB windows HD and another 3 TB HD in the remaining bays.
I would like to use the 3TB HD to store data like the pics/video from photos, my iTunes library and my movie collection while keeping the programs and osx on the 500gb ssd. Is there a way to default the 3TB drive as the mass storage, or do I have to move photos/itunes to the 3TB drive in order to store all the media there?

This is simple on my work PC, just tell the program to store media on a different drive by selecting it, but I cannot find a way to do this on my mac.
 
If you move your photos and or iTunes library to the 3TB, you can then start the app (photos or iTunes) while pressing the Alt key and will be prompted to select a library location.
Once selected the new location becomes the default.
