I do not understand how fonts are managed and stored in Catalina.
In fontbook, User is set as default and has 49 fonts and All Fonts contains many many more, some of which are greyed out.
When I list fonts in MS Word, it seems most (but not all) of the fonts in All Fonts are listed together with some fonts which are not in All Fonts.

In another app, all the fonts not greyed out in All Fonts are listed.
I have yet to find and app where only the fonts in my supposed default User are listed.

I would like to remove many fonts such as all the Noto fonts and other non-English fonts that I will never use.

When I list All Fonts and right click on a font, some have the Disable and/or the Remove options greyed out. Why is this?

Does anyone know how to a) set the default font list to User in fontbook, b) sensibly manage fonts?

Apps like MS Word bundle their own fonts. You will see these fonts as well as your system fonts when using those apps.

There is no way to restrict the font lists to just your user-space fonts. Disabling or even deleting system fonts is not a good idea. You should see if the apps you are using allow you to define default themes or styles; apps like MS Word and Apple Pages have this capability.
