Managing iPhone backups in windows

How do I manage iPhone backups in windows? iTunes seems to randomly pick which backups to permanantly save and hasn't done so for a few months. I would like to save my latest backup so it doesnt get ovewritten the next time i sync.

best way would be to delete all old backups via devices menu in preferences
