I've never had a problem with iMac until now, I've scowered the internet to try and understand why this is happening but I'm finding it pretty hard as i dont really know what is going on.

The only time this mandarin style text occurs is on system preferences when I try to alter something. It doesnt affect usability, its just odd!

Anyone know why?

It's not Mandarin. It's Japanese.

It seemed that you have picked the Japanese as the second preferred language in "Language & Text" pane in System Preferences. My second preferred language is 繁體中文 (Traditional Chinese) and it showed Chinese in that password window when I tried to alter some setting in System Preferences. It sometime also happened in the password window when I was installing new apps.
