Mapping to an application server

I have 2 carts of ibooks in an elementary school and there is no place for students to save their work except on the individual iBook desktop. Our school is a PC school and the iBooks are our only MACs. I would like the students to be able to save their work on our network application server. I would appreciate it if anyone can explain to me the steps that I can follow to map each iBook to the server.
