I've been given the task of typing out the lecture notes for this mathematics course I'm taking and was wondering if there was any special software that can be used for the special mathematical symbols and operators. Is there some word processing software that has included mathematical symbols?

well, I am going to suggest LaTex, which is the absolute standard for mathematical documents. Unfortunately it has a steep learning curve (but it is well worth it).

You can use equation editor in Microsoft Word, but to be honest I'd rather stab myself in the eye than ever have to do that again.

LaTeX is by far your best option for this. I think it is the primary means of publishing mathematics style papers. It will stand you in good steed if you learn it now.

you can use the "grapher" program that came with your mac. It is in the utilities folder

You can use an application called Math Magic which is quite nice and works pretty well.

There are some mathematical symbols in the Mac character palette. System Preferences > international > input menu.
