Title says it all really. The price difference between a completely maxed out iMac (apart from sticking with a 1TB SSD) and the base model iMac Pro is about £500. Question is simply, will the iMac Pro be considerably better machine for tasks like video rendering and working with Keyshot (rendering and animation software)?

Yes double the cores in multithreaded apps and better graphics designed for Pro apps not to mention eec ram for complete accuracy and peace of mind.
