I'm looking to buy a USB-C to HDMI 2.1 cable and the ones I see on Amazon describe a limitation of 4K/60hz as it's a MacOS limitation. Really?

Depends on which Mac. Check the tech specs page for your Mac, or provide your model details.

Think something is wrong as Google seems to indicate there are limitations with HDMI over DP.
MBA M1 supports HDMI 2.0 for 4K@60Hz. If you want 6K@60Hz, you'll need USB-C DisplayPort or Thunderbolt. Why do you think "something is wrong"?

That's the clarity that was missing from your post and Apple’s documentation.
