MB pro with Dual 24 LED displays using a Matrox DualHead2Go

Is this possible?

Would need a MiniDisplay port to VGA adapter to link Matrox unit to Mac Book Pro. Which is available.

But can't seem to find a MiniDisplay port to DVI adapter to connect 24 LED displays to Matrox Unit.

Anyone know - or should I just go buy a 30" display?

You can't do it like that. There is no way to connect back to the LED displays.

DisplayPort does supports daisy chaining displays so theoretically you should be able to, but I doubt Apple will do anything to help.

If you want a 30" you will need to wait a while and buy the $99 adapter (4-5 weeks shipping still).
