I have a 2020 MBA M1 and I am trying to understand if there are any other screen size/scaling options aside from what I am seeing. Under the display settings, for scaling, I can toggle between only 4 different scaling options. Are these the only 4 options, or is there another way to get additional options/customization?

Yes you can use some apps like SwitchResX and there’s some others too that exist. Certain resolutions will work best with the HiDPI/Scaling but you can choose anything with SwitchResX and even make completely custom resolutions like 1800x1000 or whatever you can think of.

These apps work on intel macs so you’ll have to verify if they work on M1 chips as well but as far as I know this should work fine and if it doesn’t quite yet it won’t be long before someone makes an M1 app/software for this.

Is there another way to increase the font size on the display independent of screen resolution? The issue I am running into (visually challenged) is that the option between the two scaling options that are bigger than default (icons and font) one is too big and one is still too small to read comfortably for extended amount of time.

In accessbility settings for display/screen, you can change size of menubar to Big.

TinkerTool can adjust fontsizes:

I use EasyRes to change resolution from menu-bar:
