I have a five year old MBP. It's processor is a 2.4 GHz Intel Core 2 Duo. Will a new MBA with a 2.0 GHz i7 performa as well or better with large excel spreadsheets?

I replaced a MBP with the same specs as yours with a 2011 1.6ghz i5 MBA and it is much, much faster in every way. The processor is almost twice as fast and disk access is probably 4x to 5x faster. The 2012 i7 machine is going to be even faster still.

I dont work for Apple, so take what I say with a grain of salt, but I have a sneaking suspicion that the new one might perform better than the C2D.

Yup, the Core i5 1.6Ghz in the 2011 MacBook Air is faster than any of the fastest Core 2 Duo based MacBook Pros (C2D 3.06 GHz) according the Geekbench.
