Hello Chaps -

I have a MBP 2011 that has the one audio port. My understanding is that port is a input and output port. I would like to start playing around with podcasting. is there a way to use a normal headset in that port? I have an old one that has the green and orange plugs (speakers and mic).

What are your thoughts?

I believe on the 2011 models, in System Preferences, you could choose whether the port acted as an output or line in. Alternatively, you could go for a USB headset or one that combines the microphone into the same cable like Apple's EarPods.
