At the moment the MBPs from 2010 are the oldest still capable of running 10.13 safely.
Any idea till when a 2015 MBP would be useable (as in receiving security updates)?
 
Security updates are also delivered to at least the previous version of mac os, and I think the one before that as well. so, for many years to come.

I know - I'm interested in (possibly) buying a used MBP 2015, so wondering how long I could use it - 5 more years or more?

If you want a ball park figure, yeah 5-6 is a pretty good estimation. Assuming approximately 7 years of OS updates would take it to 2022, then a year or two of being on a still supported OS version. If it's the 15" that's still being sold, perhaps a little longer?

I'm looking at a 2015 MBP, although a Mac Mini would suffice for me, but a Mac Mini 2014 doesn't seem a good deal any more. So unless a 2018 Mac Mini is in the pipe-line, I may be 'forced' to go for a MBP.

Answer:
Use it as long as it will run and do the things that you bought it to do.

Opinion:
Don't get twisted up about "security updates".
All too often, these are tempests in teapots that threaten to do far more damage than they seem to actually accomplish.
I've been a Mac user for 31 years now, run old OS's as I please, and have never been bothered by such stuff...
 
A 2014 Mac Mini was a consumer ripoff from the instant it was introduced.
Yeah, I bought one 2 years ago and sold it on eBay shortly after. It was a disappointment then, and it is largely unchanged since then. I sure hope Apple doesn't wonder why interest in their Mini is so poor. It's not because people don't want the form factor anymore, it's because the current model is highly disappointing, especially when compared to the much more upgradeable version it replaced.
