I changed two icons on my dock; I now have the images I wanted, but with the square white background too. So, how do I get ONLY the image w/o the white background?

You probably used an image file (JPEG?) without an alpha channel (transparency channel, which would make the white you see transparent), normally PNG files do contain an alpha channel, but just saving a JPEG as PNG will not do the trick. You either need to get your hands on a PNG file with the transparency already present or cut the white out yourself via Gimp or similar applications and save as PNG file.
