I just dropped off my Late 2019 MBP 16" for a logic board replacement under my apple care warranty. I was wondering if anyone knows what the odds are that they will just provide me with a new MBP. Mine wasn't an off the shelf model, it has the 2.4ghz i9, 32gb ram, 2tb hard drive and the upgraded video option.

Probably not then. If it was your third time getting the same computer fixed sometimes, Apple will give you a replacement model, but it can vary from store to store—country to country.

"Owners of iPhone, iPad, iPod, Mac, or Apple TV products may obtain service and parts from Apple service providers, including Apple Retail Stores and Independent Repair Providers, for a minimum of 5 years from when Apple last distributed the product for sale."
"Service and parts may be obtained for longer, as required by law or for up to 7 years, subject to parts availability. Additionally, Mac notebooks may be eligible for an extended battery-only repair period for up to 10 years from when the product was last distributed for sale, subject to parts availability."
Being that your computer is from 2019, you should be able to get repairs until at least 2024 and maybe up until 2026. However, after your AppleCare expires, you will have to pay out of pocket for any repairs.
