i have a non-retina, mid 2012 13” unibody. When I get it back from the shop it will have 16gb Ram, 500 gb SSD (and new sata cable to be safe) and it runs on Mojave.

I know that computer only supports one external monitor, but I thought about getting one of star tech’s (Mac compatible) usb external video card adapters. Does anyone have any experience with this? Any help is appreciated.

I have the same computer as you and run 3 external monitors plus the internal display through the use of a egpu. I would recommend this set up over a usb adapter (tried and its laggy)

Recommendations on a egpu?

PS: Zion wasn’t fouled but he did charge...

The biggest headache with USB Displays are the DisplayLink drivers. They don't support High Sierra very well or at all. I've read that they do well with Mojave but I haven't tried it myself. I have used USB display adapters in the past and they are good for basic things but I wouldn't do anything graphics-intensive with them.

Update:

I received my MBP back from the shop with the 16gb of ddr3 ram and 500gb SSD installed. The StarTech USB to HDMI converter arrived today.

I installed the driver from the DisplayLink site, attached the converter, connected it via HDMI to an old, heavy, bulky 1920x1200 monitor I had (Dell 2408WFP), and I now have my 27" ViewSonic and this 24" screen running strong. Granted, I'm not watching high end graphics on the Dell, but for keeping a webbrowser and Outlook open in split screen, it works just fine.

I'd recommend being careful on macOS updates. Sometimes the macOS updates break the DisplayLink drivers and they can take a little time before they catch up.

I know. They work great with 10.14 so far. I won’t be updating anymore until I know it’s safe.
