how would the 2.4 GHz current gen MBP compare to the 2.5 GHz previous gen MBP in terms of performance for things like video and photo editing? I was all set to buy one of the new MBPs but then saw the 2.5 GHz previous gen MBP for $1500 at the Apple refurb store. Argh! I hate making these decisions.

They will be very, very similar. The new MBP may offer slightly better performance in applications that use the GPU heavily (like Aperture), but as a whole, they are extremely similar.

benchmarks are suggesting a 5-10% increase in performance for the new MBP's

...and can i have some heavy difference from the prev 2.5 and the new 2.5 while running somethings like Archicad and similar?
now, in Italy, we have the prev 2.5 on the refurb store for 1500 euro and the new 2.5 on the standard store for 1800...
Ps: i'm still not convinced about the glass covered screen, may i prefer the old matte one for cad application.

Thanks,
Franco
