I was hoping to get an updated iMac as I need a fast Mac to edit FCPX but as they weren't updated I am considering a new MBP retina and using it in clamshell mode connected to my NEC 30" monitor.

At least that way I would have great mobile editing for FCPX and Aperture along with great desk top editing when connected up, but what would the highest resolution option be once connected? My NEC hits 2560 x 1600, would that still be available?

Technically you can connect up to 3 monitors (2x thunderbolt and 1x hdmi) but I have no idea how the graphicsengine will handle the second and the third :)
 
According to Apple, the first two monitors can handle up to 2560x1600, the hdmi-port i don't know about :)
