I'm running a MacBook Pro (Retina, 15-inch, Mid 2015). Over the past month my computer unexpectedly shuts down and shows a low battery icon when I start using my computer after being idle (lid closed) for several hours (i.e. overnight).

When I plug the computer into the magsafe charger cable and restart the computer, the battery level shows at least 40% charged. When I opt-Click the Battery icon the condition of my battery shows "Normal".

Any ideas how to fix this?

Try an SMC reset to see if this helps.
