If this has been asked before could you link me the thread? If not, here it goes:

I have had my MBP for a year and a couple months.
About five seconds after closing the lid, the apple lights up. If I open the lid while the Apple is lit up, I get an error message saying that my computer is in Sleep/hibernation mode. Then, after a few seconds, my screen goes black and my computer actually enters sleep mode. After moving the mouse/trackpad, everything is back to normal.

I do have (and use) Caffeine, but I still have issues with it turned on and off.
Any ideas?

It takes some time after you close the lid before it enters sleep mode. It has to write RAM contents to disk. Caffeine will have no effect on this process. Just close the lid and give it 20-30 seconds to fully enter sleep mode.
