What is the significance of selecting different workouts in the workout app? Has Apple published a guide that describes what each does?

What is the difference between "Outdoor Walk" and "Outdoor Run"? Do they each calculate calories burned differently? You would think that both would use the same algorithm, based on pace, heart rate, body weight, etc. So why are they two different options? Or does a "Run" really burn more calories than a "Walk" for the same distance, in the same amount of time?

Do any of the workouts use the GPS or altimeter? I like to go on a hike here in Colorado that involves a 2,000 foot ascent in less than a mile. Most of the calorie burn there is from the ascent, not the linear distance. Which workout should I choose that will correctly account for this?
