Now that I have 16gb of memory everything runs much more efficiently to say the least. I looked in activity monitor and noticed kernel task and safari web content were a lot, 1GB each. Is this normal? I am new to looking into these things and am curious that everything is as it should be.

Yes, it's normal. kernel_task is part of Mac OS X, so it's CPU and memory usage will vary widely, depending on the current workload. It's also normal for Safari to use large amounts of memory.
