What are people buying for these machines? Any DDR3 rated at 1333Mhz? Do any particular brands have better compatibility than others?

I just ordered a 15" with 4GB and would like to go to 8GB, hell, even 16, but I haven't seen any 8GB SODIMMs around..

Not if the price difference is any higher then 5%. Speed difference is 0% to about 3%. And it needs a bit more battery although that is negligible.
I would just get 1333 1.5V jedec like Corsair VS or Kingston VR. They work are reliable and cheap. Everything else just a waste of money.
DDR3 1600 only if it costs about the same 5-10% price difference max IMO.

Just check tomshardwareguide.com
They often have ram reviews and usually just to notice a difference you need to get 1866 or 2133 at least and still in games and most real world usage stuff the difference is so small you might as well ignore it.

this one sums it up well.
