what is the best way to find out what prosses are using up the most memory.

cos at the moment, using istat pro my i am using 1.04gb ram of my 2.0gb ram
on my 2.0ghz macbook

and my computer is is not doing anything.

Open up Activity Monitor, located in ~/Applications/Utilities/,
View 'all processes',
Click on the list to order by amount of RAM being used,
Observe!

Sometimes a restart will sort issues like this.
Otherwise, look out for dodgy printer software and start-up software.
