Ordered my iMac this morning, with the basic 8gb ram. Looking to upgrade this to 16gb.

Would it be best to take out the 2 x 4gb and stick in 2 x 8gb, or just to add another 2 x 4gb?
 
Adding 2x4GB means you'd have to remove all 4 sticks if you want to go 32GB in the future. Seems a waste.

Stick in 2x8GB and have 24GB. If you then decide to go to 32 you only have to junk two sticks (which you really didn't pay for, so to speak)
 
Is there anyway to stuff 64GB in the new 2013 iMacs?

It would be VERY usefull when running multiple virtual machines...

To be honest, that's what I was thinking. Think I asked just to make sure my mindset was in the right place haha.

That's what I did for my mid 2011 iMac and maybe 24 GB might turn out to be all you need.

is it confirmed that the 27" can be upgraded manually?

Yes there is a little door on the 27" on the rear above the power connection featuring 4 slots for ram (with 2x4GB installed by default if you do not upgrade your ram from Apple)
