If I send someone a text from Messages, will it be identified on their end by my Apple ID email account, or by my actual name as associated with my Apple ID?
 
AppleID unless they have you in their contact list, in which case it'll show up as your name.

This is as I suspected, and unfortunate, since the email I use for my Apple ID is not the same as I use for personal, which means people won't recognize it when I text them.

Why not create a new AppleID with the email that you use and use that ID for Messages only?

What I ended up doing was creating the email address myname@me.com and adding it as a secondary email to my AppleID.

Then under Messenger Preferences...Accounts, add the new email address to the "I can be reached at" section of the iMessage account. Then below that, the new address will be available from the "Caller ID" drop down. Voila.
