I don't know if this was disabled in iOS 7 or just the 7.1 update, as I don't remember the last time I tried this. It used to be you could tap and hold a message you've sent in Messages and the option would pop up to send as a text message. That has now been replaced with More, but no option to send as a text message appears on the following screen. What's the trick to this now?

It only happens if the iMessage has not yet been delivered. If it's already been sent and reads "delivered" you will not get the option to send as a text message. If it has not yet been delivered, you will be prompted with the option to send as a text message when you hold down on the message.
