With a MacBook Air m2. a Microsoft wireless keyboard and mouse. there doesnt seem to be any settings to change, only apples keyboard settings which dont refer to it.

basically when I havent used the keyboard for a little time it seems to go to sleep, even when the Mac hasn't as im using the mouse. the mouse never does this, but if I start typing, the first 2 or 3 seconds of keystrokes do nothing then it starts typing mid sentence, very annoying.
 
This is a Bluetooth keyboard? Or does it use a USB dongle?

Pretty much every Bluetooth keyboard is like this, including Apple's own Magic Keyboard. They all go to sleep to save battery. And they don't generally include an option to change that.

If you only ever use the keyboard in a fixed spot you might want to switch to a wired keyboard. If you use something like a USB C hub you can use one cable for power, a monitor, and keyboard and mouse.
 
PRO TIP: If your keyboard doesn't wake up for a few seconds and you lose the first half of your sentence every time... wait a few seconds before you start actually typing.

Was never a fan of bluetooth keyboards, but got the Apple one in 2020 with a new Mini to see how I liked it. Did not have problems waking up the keyboard during ordinary use, but it was really annoying logging in at startup. It would "eat" one or more characters of my password which was confusing.

But the nice thing about the Apple keyboard is, you can plug it in and it becomes a wired keyboard. So, I just leave it plugged in all the time now. My Mini is less than 12 inches away from the keyboard, I don't need it to be wireless. Only advantage is that wireless frees up a USB port. When I need an extra port, I just pull the cable from the keyboard.
