Im looking to upgrade the ram on my imac from the original 4 that it came with. It says the max ram it could handle is 16 gb but if i keep the original 4 that it came with and added 2 8gb pieces of ram would it just cap off at 16 or could it use the full 20gb of ram?
 
You will be fine...
The Mid-2010 27-inch iMac does support 8GB per slot, so maximum (regardless of the amount that Apple suggests) is 32GB. So, if you add a pair of 8GB sticks, the total will be added to the 4GB that you already have, and should recognize all 20GB.
