My wife and I are visiting family for the holidays and only brought my MBP with us. My wife's parents gave her a new iPhone 4 yesterday. She'd like to start using the new phone before we head home next week.

Is it possible for her to back up her current phone to my computer and then restore that backup to the new iPhone 4? Will she be stuck on my computer/account if we do that? Will it even work?

She can wait a week if necessary, but it would be nice if she didn't have to.
 
You should be able to do a backup and then restore that backup on the new iphone. You won't be able to transfer songs and videos that are not in the itunes library on your MBP.

Agreed

I would rename my phone first before backing up/restoring so there is no confusing when choosing the correct backup file
